Unless you're going for a 480 sli, then don't bother. The 295 should do everything you want it to, except play crysis at 2560x1600. In most of the benchmarks I've seen, the 480 is barely ahead of the 295, which is most likely either because of the:
-the 480 having roughly 2x the VRAM
-the new fermi architecture
i was going for sli but now im going to wait for the next gen cards!

If you're happy with your dual GPU there's no point in spending extra money for the GTX 480. However I heard dual GPU cards have microshuttering problems + not all games make good use of them.

I'm pretty sure the minimum FPS on a GTX 480 will be better.

Also, I heard the EVGA replacement for the GTX 295 is the GTX 470 not 480 so the 470 would be the equivalent of a 295.

A GTX 580 should be the minimum upgrade for a GTX 295, as far as Nvidia goes. Anything else would be a waste of time.
