You HAVE to use display port as your third one, sorry. You can't use HDMI.

I just set up eyefinity 3 days ago and it's working fine, but I use DP to DVI

Sorry I didn't make it clear, to enable eyefinity you must use the
DVI-DVI-Displayport ports on your video card.
You can't use HDMI.

My eyefinity setup uses the two DVI ports on my 5870, and for the third monitor I have an active single link DP to DVI adapter
Other configurations should let you extend the desktop, however...
