Backup/Media Server question

OK so I've been kicking around the idea of building an HTPC, but after reading and reading and reading, I've decided I was trying to do too much with just an HTPC, and have decided to build a dedicated media server/backup server first, before I move on to an HTPC.

Let me apologize in advance for all the noobishness I'm about to spew, but I've not messed with a server before.

My goals for this server would be:
  • Run some type of software parity-type raid array like unRaid or FlexRaid, or something similar, open to suggestions.
  • Rip and transcode my DVD/BluRay/CD collection on the server.
  • Store and stream said media content to the other PC's/Laptops in my home.
  • Download torrents etc
  • Have all media content accessible online to me and my family when we travel, like a cloud if possible.
  • Scheduled backups of my main rig, and two laptops, all running Windows 7 or Vista.

I'm not a command line kinda guy, at least not yet. I'm not scared of command line, but at the same time if i can do all this with a GUI then by all means I'd love to. I would like for it to be headless though, something I can manage from my main rig.

So first of all, is it possible to do all of the above with one machine? And would I use a full blown Linux OS like Ultimate Edition or would I have to use a server OS? I'm just not real sure where to start. Would prefer to keep software costs low or FREE. I've not tinkered with Linux in the past, but this looks like the perfect excuse

Any guidance or resources you can point me at would be great

Also, I bought some hardware last night so I could start tinkering.

Antec 300 Case
Antec EA-430D PSU
MSI 880GM-E41 mATX Mobo
Athlon X2 260 Regor CPU
4GB G.SKILL DDR3 1333
1TB Samsung F3

I figure the F3 will ultimately be the OS drive. I'll eventually add 4 or 5 2TB WD Greens for the Raid array once I know I can make it work.

And if it doesn't work, I can always use these parts for the HTPC.

I'd suggest that you get a smaller different drive for the OS and use the 1TB just for storage if you stay the server route.
