I know a very small amount of HTML, but I'm looking for something more advanced. I'm willing and ready to spend months learning, but I don't know where to start.
The website itself will need to be able to handle a couple hundred products, secure checkout with CC and paypal and other options. I would like to do 360 degree views of the products as well, if there is a way to implement that easily I would like to learn how. Really what I'm looking for is a good place to start, and maybe some good books or other class type teachings.

I would say that you could take classes until the sun stops shining(never), or you could pick up a book that covers html basics. Plus, save yourself a whole lot of money by buying a template and starting to customize it from there. As for the 3D 360 degree viewing this can be done once you have the site up, thru custom flash...or economically with add-on service. First just check out some templates for ecommerce...

There is a great open-source ready-made and completely customizable solution at http://dashcommerce.org/
It is an asp.net site and I have heard good things about it; also they have a great community here: http://dashcommerce.org/forums/ It has everything you are looking for minus the 360 degree view, but that can be added as thunder stated. In order to customize it, you will have to learn html/css, asp.net and possibly some c# but they are relatively easy and have great communities. Gives you a good place to start -- no sense in re-inventing the wheel.

I would personally use already existing open source ecommerce software, and prepare myself to modify it. This means learning the basics of HTML, then PHP and MySQL most likely.
__________________(ASP.net sucks. Sorry. I say that because it is proprietary and only works on Windows servers, while PHP is cross platform, and thus superior. While dashcommerce looks nice, it limits you towards what servers can run it, which could end up costing you more money in the end with whatever you ultimately want to do with it.) After a quick search, I might suggest [modifying] this PHP open source ecommerce software: http://www.oscommerce.com/

The new Dreamweaver with CS4 is meant to be a hell of a lot better for newbies according to my geek buddies.

But whether or not you like asp.net is a personal preference.
