I am looking for a fun game that isn't a FPS. Something like Final Fantasy 7. Something that will provide hours of entertainment. Options?

Hmm, I don't know much on Xbox since I haven't played much of it, but PS2 wise: Kingdom Hearts [series], they have characters from FF and its a really addictive game, ive been played since I was 6 and im now 14 xD
