I'm able to get a all core OC of 4.250ghz on my asrock X370 Pro 4. I feel as if I'd be able to get better clocks, however im limited by my boards BIOS. I'm "limited" to AGESA 1.0.0.1, and my BIOS doesn't have any LLC (load line calibration) settings even though my boards VRM could obviously support it.
So no, you do not NEED a x570 board, but just search for boards that have good and updated Bios's. I bought a b350 board recently for my friends birthday that both had LLC and the newest AGESA code, even though it has a weaked VRM than my board (and inferior chipset).

So just do your research. Find a board with good VRM's and a company that actually rolls out bios updates.

Not able to decide on this https://valid.x86.fr/qmfwx8 3700 x if it is a keeper or should i go with the cheaper 3600 https://valid.x86.fr/cs0psh on a mostly gaming environment . FPS are within the margin of error, temps fav the 3700x due to lower operating voltages .

For just gaming, I would highly recommend the R5 3600.
