Sure, you can install the OS on any NVMe SSDs installed on the motherboard.

If you're asking about the add-in board that is included (with the 4x NVMe raid), I haven't tried with that setup. Though even if it was not supported with the add-in card, you could likely work around that with a bootloader installed on a separate drive.

I had both, the "old" Gigabyte X399 AORUS Gaming 7 and now the MEG Creation. The latter is miles better than the Gigabyte board. Gigabyte isn't able to get X399 stable, BIOS support is non existant, bugs just don't get fixed, even if many people complain in the official forums. So if I need to decide again: MSI for sure.

I am close to ordering the GIGABYTE X399 AORUS Xtreme for a 2990wx build. I really want to do a 4x gpu setup and its the only 2nd gen x399 board that supports it. I am coming from a 7980xe which I OC to 4.2ghz and run 24/7. I was hoping to OC the 2990wx to about 3.8ghz and run it 24/7. I am going with a custom water cooling setup, 2x 480 res loop for the cpu, and a separate 2x 480 res setup for the gpu loop. I plan to have 2x power supplies, with all the gpus on one power supply.

Is the GIGABYTE X399 AORUS Xtreme going to work with this setup? Or do I need to make some changes?

Anyway to cool those vrms? I guess its down to if I want to sacrifice a gpu for cooler vrm temps.

After watching these videos seems like the Asus Zenith Extreme would be the best option for me if I want to do 4x gpu. I just hate to invest in a gen 1 board.

Other issue is I cant seem to find any Asus Zenith Extreme new for sale, newegg has some open box ones which is always iffy.

Also saw you can put a waterblock on the zenith extreme.

I would go with the meg or zenith alpha. The aorus extreme gets warm. I've had the gaming 7, aorus extreme, meg, zenith and the alpha. Theres open box deals on amazon for the alpha. I got mine there, condition was "very good" what I got was pretty much brand new. Everything was sealed.

I think I am going with the zenith extreme, or if I give up the idea of 4x gpu I will go with the alpha.

The nice thing about the zenith extreme is I can get a monoblock which covers the vrms as well. From what I read the only difference from the zenith extreme and the zenith extreme alpha is the better arm basically. But water cooling the zenith extreme should take care of that I think.

I cant find any new or open box zenith extreme, I did find some OEM new on ebay though not sure how I feel about that, no accessories but I never use them anyway.
