Why so convex?

Hello!

After 5 years I came back to custom water cooling, and after building my loop I kinda wasn't happy with the temperatures on my 5820K let alone after upgrading to 5960X.
On both CPUs I saw there was a bad contact area, worst was on 5960X. First I decided I will lap the CPU, It was quite convex itself, but I didn't see much of an improvement.
Then I decided I will try lapping the brand new Supremacy block, after 2h it was finally flat and polished... and? 18°c on max core and 14°c less on package.
My question here is why is the block so convex? In what case this is a good thing? I read somewhere that the jetplate affects this, and I alread had the thin one in "set up" for 2011-3 socket.

What is it that you dont like about the EK cryo and how does it clog blocks?
Im curious cause I have been using it for quite some time with no issues as of yet but I use the clear.
What do you recommend as a replacement? I wont go back to plain distilled water, too many issues there
