5700 non XT is the best bang/bucks you can buy right now or a 5600xt if at a lower price by some margin from the bigger sister

That's not a good value. Look into the RX 580 @ around $120. Or if you don't mind second hand you can find a Vega 56 easily right around $200 which will outperform the 5500 XT.
