I'd venture to say and probably the majority of this site will agree (that has used higher refresh rate monitors) that there is a discernable difference between 60hz and 120hz monitors, and a very pronounced one at that. As noted above, latency is big factor but also lower refresh rate increases eye strain. I switched laptops from 60hz to 120hz because of eyestrain and had moved up from 60hz to 120hz desktop monitors when they were first released.

Steady frame rates or not, the faster the framerate the better smoother the picture.

It's better than two 27" monitors though, I have a 34" 21:9 right now and it's good but I still could use more screen real-estate. As it is, I do turn my head slightly but it doesn't give me any issues fortunately.
