Save the bios file with GPU-Z, then load it in MPT.

Thanks so much! I'm really revealing how green I am with these questions lol.

I was able to set the maximum clock to around where the factory OC card should have been (1615MHz core, 1750MHz boost), and then I also lowered the memory frequency from 1750MHz to 1700MHz. I have already seen more stable video gaming and stress testing, but I will keep going for a week or so and check back later to update.
