No OCP? That's not like leaving out a feature, that's a basic safety necessity IMO. In the event there's a bad connection somewhere that means instead of shutting down the unit just keeps heating that point? Maybe OTP trips first?

As for what ram to pick, check the board's QVL or the ram's QVL to amke sure it's been tested so you won't have to fight with it...though at 3000mhz that might not be an issue.
