I use a blend of Mesquite and Oak for when I BBQ. I'm actually cooking chicken right meow and it's doing great. Grill temp is 250degrees and it's taking about 1 1/2 hours. mmmmm 

 

I think the real question should be: Dry rub or sauce?

Good choices on the wood. Mostly mesquite and pecan here. Every once in a while I will go with some oak. We dont use a lot of hickory in Texas.

Dry on everything. I will sauce the ribs 20 or so minutes before they are done as well as on pork loin sometimes. No sauce on chicken, brisket or steak. Steak I use a garlic butter baste or a nice rub.
