Excellent choice on the CPU.
The ASUS boards might be ok, but their VRM needs to be better. When it comes to a great VRM (for overclocking), the Gigabyte Z390 AORUS Elite, Pro, and Ultra are much better options. They all have the same VRM, and it's just about the best VRM you can get right now in that price range.
For your plans, I recommend the Z390 Aorus Pro. That's actually the board I'm going to be getting for the 8700K when I buy it, but all I'm going to be doing is casual overclocking with air cooling. So, the Z390 Aorus Pro actually major overkill for me, but I don't want to settle for less. It has a very good price for what it offers.
