which x299 motherboard for i9-10920x?

Hi everyone, I would like some advice for purchases.

I'm not sure which motherboard to combine with a 10940X / 10920X

Asus ROG Strix gaming-II
MSI x299 Creator (not MEG Creation)
Gigabyte Aorus Master x299x

or an "old" mobo like the Asus Prime X299-DELUXE II (I didn't understand if it can manage the 48 lanes and 256GB of RAM with only the BIOS update instead of the "refresh" cards above)

The features I'm looking for are:

stability (my PC is turned on H24)
avoid throttling problems on VRM or CPU (often I do encoding / transcoding or other CPU intensive activities for several hours or even days)
overclocking as far as possible (I've been using a 4.5GHz i7-4820K for 5 years now with zero problems)
fan control depending on the load (I like the idea of idle fan stop on Asus and Gigabyte. is it also present on the MSI?)
last, but not least, reliability: today I am using an Asrock after years and years of Asus Mobos and, while the latter are still 12 years apart, my Asrock x79 has already lost 2 USB 3 and 4 SATA ports that give errors on errors, forcing me to keep detached two discs on the 7 normally connected and the BluRay burner

Thanks a lot for any help / suggestion

I haven't used a gigabyte board in a very long time so I cannot give any advice on that but my Rampage VI Extreme and Apex as well as MSI Creation are all really solid boards. I don't think you'd have any issues with those two you listed. I'm not sure if MSI supports fan stop that you are talking about or not since I use manual fan controller for my fans. I do know the MSI software for my board kind of sucks and you have to do fan control in the bios.

I use the creation for my daily computer and have the extreme and apex as others for testing lol. My old system I used the X299 OC Formula and I've had no issues it still works great I just wanted 8 ram slots. My old X79 champion asrock still works fine no issues either so sucks yours is crapping out.

Thank you very much.

Maybe I was unlucky with my Asrock X79 Extreme6. I'm using all sata ports (8 HHds and 2 burners) and more time passed, more errors I got from Asmedia controller
First I got error on secondary channel if I put 2 HHDs, so I configured first channel HDD and secondary one burner.
Then secondary channel prevent me to boot with burners and I needed to detach them
At last I began to have errors on disk write on HDDs...
