Hi,
One more thing you might consider
You delidded the 7900x right

Did you notice the die is more horizontal that square or even vertical ?
Having a horizontal die on my old 7900x it liked the water jet horizontal also using a ek evo supremacy which is similar design as velocity

The velocity has a vertical water jet great probably for a 9900k but not for a 7900x

So I'd recommend rotating the velocity to where the logo is sideways either direction clockwise or counter clockwise.

It might tighten your core temps to where they are closer to 10c apart instead of 14c apart from what you showed earlier from the R20 run you did.

There is a lot a play here.
Firstly the 7900X is a HOT chip.
Are you measuring your liquid temp? If not you cant blame the rad just yet.
How are you over clocking? Adaptive or constant voltage? If constant Vcore your idle temps will be hotter.
What power profile are you using?
As already mentioned a large spread in core temps suggest an issue other than the rad. Is your chip delided and redone with LM?
Do you have good contact with the block?

if you are looking for exceptional performance a slim rad as the only rad is not the best of choices. If thats your only option the HW labs GTS is about as good as you are going to get, however, you cant know if the rad is the issue if you dont know the liquid temp and you are running a high performance profile and/or constant Vcore over adaptive.
