Kind of a shame that you have G-Sync. The 5700XT is the best value right now. But since you need to go with nVidia, the only other real choice is either the standard 2070, or the 2070S.
The standard 2070 can be found relatively cheaply right now considering it's being phased out. You can find it for around €100 less than the super version. The 2070S is the next best price/performance card out there. The 2080 is generally overpriced, and the 2060 and 2060S are simply not worth it for the price.

I kinda have the same feeling that the 2070s is the sweetspot.. only which Version do you recommend?

Between those, I would probably grab the Gigabyte since it's the cheaper triple fan card. Gaming x trio is nice, but it's a pretty big price jump and you would have to wait on the pre-order.

The Gigabyte Gaming OC and MSI Ventus are cheaper because the cooler are not all that great they are not bad but there are cards with much better coolers
If you are fine with higher temps and more noise because you want to save a little thats fine just so you are aware of it

Another thing to note is the MSI Gaming X Trio is absolutely MASSIVE and wont fit inside many cases
Even my full tower Phanteks Enthoo Luxe 1 barely has space for it with the HDD cages in place

Ahaha exactly.. I would spend another €100 for the 2080..

I have to say the GIGABYTE GeForce RTX 2070 Super GAMING OC WHITE 8G - €589 will fit in my system pretty well as all the cables are white etc.. but the cooling is worse than the MSI..

Its a €200 gap with the 2080 and a €60 eu gap with the MSI 2070 super..
