I have 2x2gb 1600mhz cas7 at the moment

I'll prolly buy another set in the future... or upgrade.

depends on the rest of your system.... i had cas 8 on my 1600 ram and with benches and performance it wasn't as good as my cas 9 at 1872. I have a sandy bridge rig and it seems to like clock speed over latency.

So it depends on your entire system... you can use sisandra or maxxmem to make sure though. Test it at both settings.. Mine preformed better at 1872 cas 9

Will I be able to run 1.6v RAM in a P67 motherboard? All the compatible RAM listed is 1.5v...

In my testing, my 3x2GB @ 1475 6-8-6-20 was a little faster than 1853 9-9-9-27

Also, should I buy 8gb of RAM or 4gb? I'll be using the computer for gaming, photo/video editing, and multimedia.

4gb (2x2gb) is definitely cheaper and seems to be what most people go with.

Yes, 1.6V will work on P67.
