well they are both dual channel if they are in sets of to the main difference between them mostly being that 8gb or ram will be more usefull for video editing that 4gb of ram

Should be no problem. Just make sure that the timings are the same as well as the speed and the 2x4gb will be as fast as 4x2gb. Also, you will have the ability to add more ram to max out the 16gb rather than the 8gb with 2gb sticks

Does the stuff actually use more than 4GB?
I went to 8GB for video editing, even then I don't go over 8GB

2x4GB is less stress on the memory controller, which allows you to clock the CPU higher, but the sticks also usually allow a little less b-clock increase. If your overclock is mainly on multipliers then it's not a problem. If your overclock is mostly on clock speed rather than multipliers then the 4x2GB is slightly better.
