I have a DD12v which comes with 3/8" fittings only, and I ordered 3/8" to 1/2" adaptors for it but I was only shipped 1. I guess I will order another one but for now for leak testing would it be ok to use 7/16 tubing on the one 3/8 fitting?

Cut a 1 inch peice of 3/8 ID tubing and slip it over the barb then put your 1/2" ID tubing over that and clamp, instant, cheap adaptor.
