Solid state caps, Different bios and more mosfets I think.
Did you pay for the 780i FTW? If so, I would call EVGA and raise hell.
ease of overclocking with ftw version.

Yeah, they're two different boards with two different prices. If you stepped up to a 780i FTW and paid the difference for a 780i FTW, then that's what you need to get. You need to call them and ask ***.

The main difference I could fine that is the memory standard for the regular 780i is DDR2 800 and the memory standard for the FTW edition is DDR2 1066.
780i ftw has solid state caps and better bios, amongst other things. Its a better overclocker. Call and see if you can get it.
780 ftw is the tits.
I have both boards and the FTW has solid caps, a different BIOS and will run a higher FSB, especially with quads.

It also supports 1066Mhz memory by default. Even though with 8GB of it, I have to clock down to 900Mhz.
