100C!!!
Thats hotttt...
Um, the cpu shouldn't be emitting enough heat to do that to your gpu.
I dunno, just kick up the fan speed on the 8800.
i have i set the fan speed to 100% if the fan speed is normal the temps on load go to about 110c
If you don't already have it, get the Evga Precision tool and adjust your fan speed higher. If temps still do not improve try reseating the GPU cooler with a quality thermal interface material like OCZ freeze, IC Diamond 7 or another that's comparable to those 2.

EDIT: When reseating the cooler, be sure to clean both the GPU and the cooler with rubbing (isopropyl) alcohol.
reapply TIM, clean out the stock cooler and see if you can space the card out from the CPU some more, you have any pics of your case sounds like you have major airflow problems

110C is means for the card to be destroyed.

and the only thing that overheats is the gpu

hmmm, Apply the TIM again, I once hit 125c after playing Crysis,
after i removed my Original cooler to see the die
, and applyed a fake TIM crap!!

Try blowing in the 8800GTX. I'm sure there's some dust in there that's causing it to overheat.

Remove it from the computer, take off the shelling of the card and blow any residue/dust off of it.
yup sounds like there was a build up of dust in the card and when you bumped it installing your new cpu it got knocked lose, when the cards fan kicked in it went to any open air flow spot ans stopped it up.. my 8800gts 320 did that a few times when i had it..
