Is there a point to enabling ahci if I don't have a raid setup, or an ssd?

Yes. AHCI can improve hard drive performance. You may not notice however, but I would turn it on. It would allow you to plug in, or unplug a sata drive while the system is running.

Not really a point, unless you have either of those two options.

You will not notice the difference.
