I'd say definitely go for 1920x1080 (or larger). I'd rather have a 27'' korean 2560x1440 screen with a smaller (maybe portrait) 2nd monitor than 3 cheaper 1080p TN panels any day. Personally, I did used to have an eyefinity setup, if that matters.
A 3rd monitor adds almost nothing to productivity (it actually slightly hurt my productivity, I prefer 2x monitors with desktop switching), and overall I'd say the gaming experience on a single, higher quality, larger monitor is better than triple mid-sized monitors. Of course, I'm considering the fact that many games don't work well with triple monitor, and even games that do work well often have FOV/UI bugs.
