I have Gigabyte's P55A-UD3R and I don't know much about that voltage stuff (qpi/vtt, etc.). And since I don't want to burn anything I have been thinking about switching all setting that are on "auto" into "normal". But before I do that I want to know what differences these modes have? Also if I'm going to OC my system some more (right now bclk 153, turbo and ht on) when should I start bumping the voltages higher??

If you're not overclocking, leave all settings on AUTO (except, possibly, for the memory - which you may have to set voltage & timings for manually).

Before you start bumping the voltages, you should definitely read up on them to understand what you're changing. Go as far as you can on stock voltages, then make bumps as necessary when stock voltages will no longer allow for stability. It's not quite a science and there is quite a bit of trial & error.
