It's been around 2 months since I built my first rig. I game on it, with a 7850 and dont really want to crossfire. I have an Asus P8Z77 M-PRO which is a mATX board. Is there much difference between mATX and ATX? And would it be sufficient for me? I'm just not sure, because everyone I hear about has full sized boards...

ATX boards get more press because they typically get more high-end features. However, the only inherent differences between ATX and mATX boards is the physical size (12" x 9.6" vs 9.6" x 9.6") and available expansion slots (typically 7 for ATX, 4 for mATX). Everything else is based on manufacturer's price/feature segmentation decisions.

In short, if you're only ever going to run 1 video card on your rig, then there's no reason why an mATX board wouldn't be suitable for you.
