Dual booting will have no impact on CPU or GPU performance. Multiple OSs is the way to go. I personally run Win 7, 8.1, and two 10's. One of the Windows 10 drives is my daily OS for everything other than benchmarking/overclocking. The other Windows 10 drive and previous OS versions are strictly for benchmarking/overclocking. Better to crash while using an OS that you don't use daily for regular stuff.
Installing the drives on separate drives is not necessary, but something I do. You can create partitions for each OS that you choose to use and go from there.
