Fan controllers and Automatic speed control of fans

I have read in Shadowclock's air cooling guide and in many other threads that it is best to put high performance fans like panaflos on a fan controller. Correct me if I am wrong, seems like the recommended fan controllers are all manual. So how do you guys make sure that you are running the fan at the appropriate speed? I am thinking I will feel better if the mobo was increasing and decreasing the speed of the fans based on the temps. But these fans are not safe to put on the mobo header. Is there any good fan controller that automatically sets the fan speed?

Do you guys measure the temps at your most common loads, and set the fan speeds accordingly? And once you settle on some speed do just leave the fan control alone? What if you are not around and the components overheat (Maybe there is some bad software that starts pinning the CPU)?

I set the speeds with the tool Speedfan. Google for a few how to's or something, i control 4 fans with it (2x cpu fans, 3x 140mm case fans, the other fans are quiet enough)
You specifically mentioned panaflos and I have three Ultra High Speed 120x38s in my system and use a Sunbeam Rheobus to control. Personally, I don't like the idea of automatic fan speed settings - the noise produced by the constant throttling would annoy me. They're also significantly more expensive and generally less powerful (the rheobus provides a whopping 20W per channel).

That said, I just set my fans to whatever is bearable... that generally means ~7V while not doing anything and ~10V while gaming. Just set it to whatever sounds good to you and then run an hour or two of Prime95 to see if it stays cool

Killuah and Killa thx for your responses. I have always been content with letting the case fans run as they came. I am pretty new to this stuff. I guess I am going to try your suggestions.
I am atleast a month away as I have just started buying parts for my build and hoping to find some good deal on this Black Friday

Do you have any issues with clicking? I know Vapor reported that some of his Pana Ultra HIgh's had problems undervolting.

Also, how low can you take them? To nearly silent? I have a Panaflo Quiet L1BX and on my Rheobus I can only take it to the 3 o' clock position before it turns off. However, it is nearly silent at this speed, and I'm quite pleased with it
