7800GS performs a fair amount better than the 6800GT actually, even though they have the same amount of pipelines. It has something to do with:
1. Much higher clocks
2. Core architecture
Since the 7800GS's core architecture is newer, it is more optomized, and performs better than the 6800GT. The 7800GS also OC's like crazy (not quite as good as the 6800GS PCI-E, but still) even with the stock cooler, just imagine OCing it with a VF700-Cu, or a Maze4!!

Edit: And no, no 6800 AGP can even touch (OC) the 7800GS's OCed speeds. The 7800GS will run a LOT faster than AGP 6800GT's, and even PCI-E 6800GT's that OC a lot better than ther AGP counterparts.

though once you get into the higher resolutions say 1280x1024 you'll notice the difference between the cards, the 7800GS will chug right through no problem with high settings.

From what I have heard, both cards are 16/6, the 7800GT has one more vertex pipeline, but I'm pretty sure that the GS has one less than the GT.
