Just as the title says, the only options for RAM are Auto, and 4.00 (With CTRL+F1). Others with the same board have more options, and I'm pretty sure I'm on the latest BIOS (I'll have to check when I get home later).

My RAM is 800 MHz, but shows up as 533 in the BIOS (I'm guessing because of the 533FSB temporary processor I have in there now).

Is this problem being caused by the processor? I will be getting either a E5200, or E5300 soon (800). Although I've also heard that these boards don't like to be paired with 800 RAM and 800 processor. Any recommendations for another processor if this is the case? Thanks!

If that board came stock from systemax then they may have disabled some bios options.A bios flash will fix that.

An 800 mhz. cpu and ram shouldn't be a problem.

Yes your ram has defaulted to 533 mhz.,because that's what your fsb is.
