GTX 295 Question.

Can I run two GTX 295's together? Or is that counted as 4-WAY SLI?

It's called Quad SLI and yes it is possible.
Yes you can run two together. If you did, it would be considered 4 way SLI which is supported.
Could I run it on this motherboard?

yes it would and you could even add a 3rd card (single gpu though) for physx if you want to and have a beastly PSU
It's possible, yes, but I've tried it before and IMHO the cost outweighs the benefits, and I sold my second 295 immediately. Quad-sli has a lot of microstutter, for one, and the scaling (on almost everything that is not called Futuremark Vantage) is not even close to worth the cost of the second card. It's also loud, hot, and uses a lot of power.

So, unless your life's ambition is to achieve the worlds highest score on Futuremark Vantage (which you'll need liquid NO2 cooling on your cpu and gpu's to achieve) ... I wouldn't entertain the thought of quad-sli 295's, personally.
Quad SLI: for when you absolutely, positively, HAVE to break the 22k threshold in 3dmarkvantage.

Just as a protip, if you do decide to go with quad sli, be sure to use the latest drivers. I experienced a difference of literally 20 degrees (c) between the factory-on-disk driver, and the more recent 193 driver. In vantage, with the stock driver, the cards were running as high as 88 degrees. After updating to the 193 driver, that load temp decreased into the high sixties. No other change in hardware in between updates, for this post's sake. Driver makes all the difference.
