Hey, you're buying almost all the same stuff I have right now. Let me be the first to say, this stuff kicks ass. Anyway, here's what I would do:
Mobo -- Spend some more money and get the ASUS A8N-SLI. This board pwns base, plus we can just throw in another card later when one 6800GS isn't cutting it anymore. If you're dead set that you don't need SLI, get the ASUS A8N-E, it's got the nForce 4 Ultra, which is better. but you might as well go SLI
Video Card -- I have this XFX 6800GS XXX, and it is absolutely amazing. My Best 3dmark05 @ 541/1210 is 6302, and I could probably push it further. Too bad I paid $205 for it
Power Supply -- Works great, I had 4 hdds in here with a dvd burner, floppy, everything and it was all fine. The only thing it can't do is SLI.
RAM -- G.Skill is the best brand in the world, but spend a little more and get the G.Skill 2GBZX, which is lower latency, higher quality ram.
Processor -- OMG this thing is a beast! Highly reccomended, worth every penny. I paid $211 shipped over at zipzoomfly.com, but apparently they jacked their prices up.
Edit: As long as you buy the Retail processor (which you are), it comes with a heatsink/fan assembly and a thermal pad pre-attached (as well as a 3 year warranty). I scraped off that pad and put some nice thermal grease on, but you don't have to. I reccomend Arctic Silver 5. The graphics card comes with a nice heatsink/fan pre-installed as well.
