I don't even want to download iTunes 10 until I know that I will not opt in when it installs. If it auto-subscribes you, how do you opt out?

It doesn't auto opt-in. You literally have to select Ping in the side bar and hit a big button saying "Turn On Ping."

Atleast for me, ping was not auto enabled when i installed Itunes 10. There was an option to turn it on and then the ping tab in itunes, but I chose to ignore it and so far it has yet to do any ping stuff for me. Theoretically it should work the same for you =P
