Should I get the i7 9700k or i5 10600k because at my local microcenter the i7 is cheaper than the i5 and I wasn't planning on upgrading in the next couple of years. So I don't think I would benefit from the lga 1200 as much. I mainly play apex, but want to get into more AAA games and video editing.

10600k will outperform the 9700k and have better memory overclocking. Z490 may support PCIE 4.0 in the future, which is a plus.

If you have microcenter nearby and can swing it I think the I7 10700k is the way to go. Thats what I am looking at right now.
