What is the difference?

G965 = onboard graphics = lower overclocks
P965 = no onboard graphics = higher overclocks

I suggest, if you plan to do any overclocking get the P965 mobo without the onboard video, and purchase a cheap PCI-E or PCI video card that fits your budget.

I guess I can use the PCI Card from my old rig below (GeForce 6200). Then I can get the P965, an E6300, a suitable case, keyboard, mouse, OS, HDD, and a PSU that fits my 6200. I can prolly get it for about $600.

Unless you will be doing very minimal graphics/gaming, it is never really a good idea to get a board with integrated video. It just makes the chipset that much hotter, and can limit overclocks.
965G-DS3 with 7900gt card and p965-Ds3 with 7900 gt card, are they the same?
