CF master cards work just like a non-CF card in single card mode (performance wise and such) besides the fact they only support one monitor, right?

You are absolutely correct, The CF card has a one DVI port and one DMS port, where as the non- CF card has two DVI ports and 1 TV-out (or DVI/VGA/TV-out).
