1) Caviar black over the greens, more reliable and dang faster (waaaaay faster)
2) Have you ever looked at the raven (Silverstone) rv02, much better than the 690
3) A seasonic or corsair 650/750 series (silver rated or gold rated) PSU would be good for your rig.

Video Card: Doesnt matter, its up to you, 570 and 580 are both good cards. You choose.
Motherboard: I would go with the Sabertooth if possible.
Power Supply: I would get a quality 750w or 850w PSU. Corsair and Seasonic both have good models.

If you are looking at getting a 580: MSI just released their lightning series: http://www.newegg.com/Product/Product.aspx?Item=N82E16814127579&cm_re=MSI_GTX_580-_-14-127-579-_-Product

And yes: the P67 Deluxe does support SLI

As for the case: I think you will be fine.

You could sli those, but I am warning you those are HUGE cards. I have the Asus GTX 570 directcu 2, but far as cooling goes it stays cool...really cool.
