Hi,

I'm all confused with RAM choice and how it affects overall performance. Especially dual vs single rank. At the moment im hesitating between:

SR 2x8GB DDR4 3000C14: G.Skill Trident Z (F4-3000C14D-GTZ)
DR 2x8GB DDR4 3000C15: Crucial Tactical (BLT2C8G4D30AETA)

I plan to put it in new i7-8700 build (OC to 5ghz if possible). Which one should I choose? Maybe some other memory?

From the two the C14 kit.
3000 C14 and 3200 C16 (or lower) are your price and performance sweet spots. If you can't decide on a few pick the lowest voltage and lowest cas then go on looks.
Before overclocking the CPU set the ram to JDEC so there's no chance of unstable ram limiting your core OC. This probably isn't the issue it once was but I'm sure there is still a possibility you'll give up a tiny bit of ram speed for core speed which is by far the most important thing, then ram, then cache.
