Which Intel cpus are/were the most popular ones?

Some of the ones that I'll guess are the i7 920, i5 750?, Q9550, Q6600, E8400, E6600, and various E2xxx chips from a few years ago.

I can't think of any in particular for the P4 line.
I had a P III 1ghz, but do not know how popular that one was.

I remember reading about the Celeron 300A as a good one for overclocking.

Were there any more?

Not really, back in the day the AMD chips were crap for overclocking, they got miles too hot. My K7 750Mhz was shockingly hot. But the ones above that you've quoted including the Q6800 were all well respected in the overclocking realms
