The motherboard I'm thinking of buying(Gigabyte GA-z87x-OC) shows : Memory Type DDR3-1333 / 1600 / 3000 But my memory is 1066 cas 7 . I know you can use high speed memory and it will auto downgrade, but should it work the other way around or can i just use 1066 without it being a problem?

I think that it'll work if you clock it to 1333, but 1600MHz is what you want.

I take is that the 1066 kit is triple channel (x58 setup?)

No I managed to snag a 8gb kit off of someone on here for about 45$ shipped, and I plan on getting a second one from newegg, as I'm a heavy multi tasker.

Thats the exact kit. I've never overclocked memory , how hard you think it would be to get those up to a standard 1333 or 1600?

Raise them to CAS 9 and you'll do 1600MHz easily I'm guesing, maybe even at CAS 8. It involves a fair bit of testing however.
