I have seen a lot of phones that run RJ45 cabling but I was wondering are they being supported by a server?? any good resources to learn more about this?? What all software is needed?? I have a VOIP device in place but it takes regular phone lines. Also, how can you record all calls??

Depends on the device.

The majority of IP phones need some sort of PBX or phone server (like Cisco CallManager or CallManager Express). Some of the Analog Telephone Adapters (ATA) also integrate with PBX or can subscribe to an external PBX such as a SIP trunk service.
