Both at once, you'll be wasting your time overclocking them individually unless you are using them for [email protected], otherwise games will only use the slowest clocking one, and that will be your hinderance
Both at same time in sync. On EVGA Precision settings 875 Core / 1750 Shader / 2052 Memory Clock will be a mild over clock you can easily obtain without any worries at about 3C hotter than the normal 41C idle.
