My knowledge might be a little outdated but again depends on the monitor resolution size...1080p? 1440p? What kind of gaming? FPS? 4X/RTS? MOBA/DOTA?

For me my AMD HD 7850 plays all my games fine on 2x1080p monitors but I mainly play 4X/RTS/DOTA/MOBA games.

Also posting your rig details on the rig-builder/signature could help a lot.

The 2500K is still a great CPU, especially if you overclock it. The only thing there that would need replacing to have you set for the next few years is the graphics card. If you stuck a GTX 970 in there (or an R9 290 as a cheaper option), it'd be a high end gaming machine again.
