To get to the point I had a stable overclock for months which I then turned off due to being concerned about power usage. I have a Phenom II x6 1045T which was at 4.0Ghz @ 1.340 vcore.

Basically this was fine, recently I moved my components to another case so that I could start a mod project on the other one.
Today I decided to test out my overclock, to fine it is unstable.

Now since then I have bought an SSD and an extra hard drive to my existing setup, so, 2x hard drives and 1x SSD. If it is infact my hard drive causing the problems then guess I can't get around that because its locked.

Because my processor is locked is it possible a faster bus speed is effecting either my SSD or hard drive which is causing the reboots?

Sometimes blue screen, sometimes immediate reboot with no errors. I managed to run OCCT for 4 hours today to find it instantly rebooted without warning. Note I do not get any prime/OCCT errors (used both), it's a plain reboot or BSOD

Before everyone starts saying yeah my cooling is fine (Silver Arrow SB-E @ 48c max load) and it was stable before I've done quite a bit of overclocking.

Maybe because you are Overclocking with only FSB, the Northbridge/HTT speeds get to high and result in a unstable system.
Normally you have to lower their Multipliers so they dont go too high. (All depends on how much FSB you are using)

Maybe you can up those voltages a bit and maybe that will make the system stable. It could be because you have more devices attached now, the instability shows only now. and didnt in the past

It may be the devices. I decided to take a hard drive out to see and Prime95s been running for a good while now.

It could be a dodgy SATA cable? I have 1 generic one. I remember in the past using standard ones they would go faulty pretty quickly and spur up all kinds of errors.

Will reattach with that cable soon to take a look. Right now running exactly same settings as before.
