Faster ram will give you better performance in gaming. Why two sets of the first option?

It won't hurt your performance at all. Do you even need 8 gigs to make it justifiable? But if you want it, go right ahead, it wouldn't hurt, except for being slightly slower with the same timings, but then again, it won't be a very noticeable difference except for benchmarks.

I would go with at least DDR3 1600 for an SB build.

AMD benefits from lower cas in conjunction with speed whereas Intel does more from speed, as I've understood it? I'd like to see benchmarks, but that's the impression I've gotten. *shrugs*

Here's a nice little benchmark if you're looking for it.
