Before you freak out about lost data on the SAS RAID-1 array, unplug the drives. I'm fairly certain that the Windows setup format is only a quick format. You could use a tool such as EASEUS Data Recovery to recover the raw data.
That is, get Windows 7 set up on the other array, and then plug in those other drives, and then use the utility. I'm sure other people have other suggestions for RAW data recovery.
About your other problem, launch System Recovery from the Windows 7 DVD.
