It's pretty much the same card, the vanilla 7800GTX is 430MHz, where the vanilla 7900GT is going to be 450MHz, it's the same core as the 7800GTX so essentially it's the same card just OC'd a little bit.
Top of the line 7900GT's will be about 480-500MHz, but expect the majority to be around 460MHz, but you can easily overclock it to reach the top-end speeds.
I wouldn't expect prices to drop too much, but you will see GTX prices fall considerably for the stock that is left, maybe 7800GT prices, just to get rid of them.
I say get a 7800GTX when the 7900GT's come out since they are the same card just under a different name and will be priced much lower
