It looks like if SLI is disabled it only uses one GPU on one card. I figured it was using one card, hence 2 GPUs.

If this is the case I had to laugh I can play most games with one core...on a 295. I usually only use SLI if the FPS are low in a game otherwise I disable it.

Thats right, with SLI disabled it will use one core from your primary card, afraid its single or quad... (unless you take a 295 out).

Can you not specify how many cores to enabe for SLI in the control panel?

OpenGL, furmark does not utilized multi gpu in SLi, it can be forced through a profile but it's probably going to flicker, and not be everything it could be under AFR1/2. Thats under the benchmark, I want to say that it is enabled (flicker ensues) in the custom run option that is not eligible for scoring.

If you are curious if your utilizing SLi in your games, theres always afterburner in background and referring to the gpu usage, or simply turn on the SLi indicator bars in nVidia inspector/profiler.

Supposedly furmark was added in the Update7 SLi profiles, as well as running the multi-gpu exe of furmark... but I have never had it work without dickering with it.
