Stress Testing?

How long should a stress test be performed before you know that your OC is stable? Which stress test is the best to use?

2 hours of OCCT or if you're paranoid you can run 8 hours of prime95 or OCCT.
Stress test it overnight before you got to sleep, if it hasn't crashed when you wake up then its stable

12 hours of Prime95
12 hours of Orthos
1 hour of OCCT
20 runs of IntelBurnTest

That's usually what I use to test for final stability. Thankfully I've never had to do this more than twice. For just a quick check, I just use 5 runs of IntelBurnTest.
5 runs of IBT is good for quickly checking and for normal use like gaming and all.

If you're doing 24/7 folding then I'd try 20 runs/ 24 hours of prime
I'm going on a 16 hour run of Orthos right now so it should be stable then. I still might keep the test going for the full 24H though.

IBT is a lot more stressful so it takes less long, but as long as you don't mind it slowing the system down.
