1 295 would be a bit more future proof, as you could get another later, but really its up to you and what you can afford.

2 x 260's would a lot cheaper, you could almost get 3 for the price of 1 295.
Tough one regarding [email protected], roughly the same output with the 295 slightly a head with the heavier units.
I'd get the 295, i prefer a 1 slot card, also in the future you could get a second 295

for gaming my vote will go to the SLI GTX260's, bunch since you suggested a gtx295 i would say why not sli GTX285's?
I would go with the one 295GTX, then later I would get another one when your budget allows.
295,you can add 1 more later.

If you can wait 6-7 months,DX11 cards are to be out when Win7 is (6-7 months) so i'd wait for 'em.

But all DX10 cards work with DX11

dependent on board and money. with your config, 2-216 - much cheaper.

A few months ago I would've said 1 295 as they were cheaper than 2-216.
I guess if the plan is to Fold and game at the same time? Then the SLI would have to be the best option. I don't know if the 295 is capable of doing that just the same or not personally. I have not done my homework on Micro Stutter with current drivers and Graphics cards and is the only reason why I frown upon SLI.
GXT260 SLI is cheaper then GXT295. Go for GXT295 if you has budget on it. Otherwise, do GTX260 SLI.
